Third Birthday CandleJune 6, 2010. I knew I had to make a change in my life, and that change meant adopting a healthier lifestyle. I felt miserable, broken, and trapped by my weight. So, I set out on a journey to lose weight. I’ve always heard and read about how you have to make lifestyle changes to lose and keep weight off, but what does “lifestyle changes” even mean? After all, I thought I made them in previous attempts with weight loss, but obviously I hadn’t because I would immediately gain weight once I stopped following the diet du jour.

Give me 5 minutes a day and I'll give you a happier, more successful life

I suppose we all agree that in order to lose weight we need to eat less and exercise. That seems pretty simple, so why is it so difficult to lose weight? For me, I find there are five keys to losing weight, the five D’s:

  • Desire-first I have to really want to lose weight
  • Don’t doubt (believe you can do it)
  • Dream about it, visualize it
  • Discipline-I have to be willing to eat less and exercise
  • Determined-I have to be persistent and keep dieting even though I occasionally give in to temptation and eat too much.

Let’s do the “Happy Dance!”

You just can’t see me, but I’m doing a happy dance today.  I hit 40 pound loss this morning!  Excited? No, it’s beyond that!!!  I’m now over half way to my re-set goal.  No way to tell you how much I love MF and how grateful I am that I found TSFL….all things are possible.

I couldn’t help sharing this with ya’ll because it so beautifully follows up with the point I was making last week. Does this TSFLer sound like she’s having fun? YOU BET SHE IS!! So much so that she is extending her goal to make room for more progress.  With everything in your life that can cause stress, the goal to lose weight should not be one of them. Making the decision to do something for yourself should be cause for excitement and anticipation of the possibilities! Remember that colt with the pretty turn around? Motivating? Now, let’s have fun with building health and well being in your life. By working at it a little everyday, watching the scale numbers go down, and the face in the mirror getting slimmer, that progress will be so fun and rewarding that you will soon be doing the “happy dance” too!! WEEEEE!!
One last thing. You friends of mine who need a little extra help, I have lots of ideas to share that might help with your personal struggles. Call me as often as you like so we can work together. I would hate to see you miss out on the party !
 
We made party wings last week, what about something to go with them? I have a couple of large Eggplants in my garden to pick. This looks like fun!
Bruschetta Eggplant with Tofu
30 ounces Mori-Nu Silken extra-firm tofu, cut into 1/2-in cubes
1 1/2 cups raw eggplant with peel, cut into 1-in cubes
1 cup (1-2 medium) plum tomatoes, seeded and chopped
1/2 cup scallions, chopped
2 tablespoons fresh basil leaves, chopped
2 teaspoons olive oil
1/4 teaspoon garlic powder
1 clove garlic, minced
Non-stick cooking spray
Dash of salt and/or pepper, if desired
1)Preheat oven to 400° F. Lightly mist a large (or two medium) non-stick baking sheet with non-stick cooking spray until lightly covered. Place eggplant and tofu, well-spaced, in a single layer on baking sheet. Lightly drizzle olive oil over eggplant and tofu. Sprinkle on garlic powder. Bake 7-10 minutes. Flip and bake an additional 7-10 minutes, or until eggplant is tender when tested with fork.
2)In large serving bowl, combine tomatoes, scallions, garlic, and basil. Add eggplant and tofu. Salt and pepper to taste if desired. Toss gently to mix. Serve and enjoy.

Live life like a champion

Congratulations Chrissy! This is my youngest daughter after winning California High School Rodeo Association State Champion in Girl’s Cutting last week. Any of you who I was able to visit with has already heard of how proud her family is of her. I thought I would share with you the advice I gave her before she showed in the finals because no matter your goals, the advice is the same to anyone striving to live life like a champion!!

“Decide what it is that you want, and GO for it! Show like you have the heart of a lion and the eye of a tiger. Show with strength,pride,and courage. Show focus and determination. When things are going your way, don’t take it for granted. If you don’t like what’s happening out there, leave it behind without another thought and bear down. There will be plenty of time later to reflect and choose what to improve on. Consistancy will always get you there.”

Where, you ask?  Winning, accomplishment, achieving what you set your mind to. Reach and the prize will be yours! One step at a time. Just talk to anyone who has achieved optimal health. It took all of these efforts in exactly the same way. Now, ask them how it feels to live the life of a champion! Was the prize worth it? A winner will tell you that anything worth achieving is worth working for.

How about a breakfast of champions? (or dinner 😉

Very Veggie Omelet for two

  • 1 small onion, chopped
  • 1/4 cup chopped green pepper
  • 1 tablespoon trans fat-free margarine
  • 1 small zucchini, chopped
  • 3/4 cup chopped tomato
  • 1/4 teaspoon dried oregano
  • 1/8 teaspoon pepper
  • 4 egg whites
  •  1/4 cup water
  • 1/4 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • 1/4 cup egg substitute
  • 1/2 cup shredded reduced-fat Cheddar cheese, divided

 1)In a large nonstick skillet, saute onion and green pepper in margarine until tender. Add the zucchini, tomato, oregano and pepper. Cook and stir for 5-8 minutes or until vegetables are tender and liquid is nearly evaporated. Set aside and keep warm. 2)In a mixing bowl, beat egg whites, water, cream of tartar and salt until stiff peaks form. Place egg substitute in another bowl; fold in egg white mixture. 3)Pour into a 10-in. ovenproof skillet coated with nonstick cooking spray. Cook over medium heat for 5 minutes or until bottom is lightly browned. Bake at 350′ for 9-10 minutes or until a knife inserted near the center comes out clean. 4)Spoon vegetable mixture over one side; sprinkle with half of the cheese. To fold, score middle of omelet with a sharp knife; fold omelet over filling. Transfer to a warm platter. Sprinkle with remaining cheese. Cut in half to serve.
